We had a jar of it in Italy, and it was really good. We thought it would be pretty easy to make up a recipe for it when we got home, and it is. It's the same as regular pesto; just replace the basil with meat, and ta-da! A tasty vegetarian treat becomes a delicious dry-sausage massacre:
1 big stick of pepperoni (we used Boar's Head)
1/4 cup grated Parmesan cheese
1/2 cup olive oil
3 tablespoons pine nuts
3 cloves garlic
a little roasted red pepper, the kind in a jar
Put the ingredients in a food processor one by one and keep whirring until you have a big red gloopy mess. Let it sit for a half an hour or so, then spread it on some crusty bread and eat it until you're ashamed of yourself.
We also cut up some cantelope and wrapped it in prosciutto. The colors are really pretty and it gets all velvety in your mouth. It's good with honeydew too. Italy has created the perfect salty-sweet snack. Way to be, Italy.
